Recipe makes 4 servings

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound raw chicken breast, diced
  • ½ medium onion, diced
  • 1 can of cannellini or great northern beans, low sodium
  • 2 cups chicken broth, no salt added
  • 8 oz canned green chilies
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • cayenne pepper to taste
  • ½ cup sour cream
  • ½ cup greek yogurt
  • ½ cup heavy cream

Instructions:

  1. Heat olive oil and saute chicken and onion until chicken is fully cooked. 
  2. Mix in beans, green chilies, broth, and seasonings. 
  3. Bring to a boil and simmer for 20-30 minutes. 
  4. Turn off heat and mix in sour cream, greek yogurt, and heavy cream. 
  5. Enjoy!

Notes: 

  • To cook in a slow cooker, place all ingredients in a slow cooker except sour cream, greek yogurt, and heavy cream. Cook on low 5-7 hours or 2-3 hours on high. Once chicken has reached 165F, mix in remaining ingredients and serve. 
  • To cook in a pressure cooker, place all ingredients in a slow cooker except sour cream, greek yogurt, and heavy cream. If chicken is diced, cook for 5-7 minutes. If chicken is frozen, cook for 12-15 minutes. Once chicken has reached 165F, shred chicken if needed and mix in remaining ingredients before serving. 
  • You can garnish with shredded cheese, cilantro, or green onions. 
  • You can also add more vegetables like zucchini, spinach, or bell peppers if desired.
