Recipe makes 4 servings
Ingredients:
- 1 tablespoon olive oil
- 1 pound raw chicken breast, diced
- ½ medium onion, diced
- 1 can of cannellini or great northern beans, low sodium
- 2 cups chicken broth, no salt added
- 8 oz canned green chilies
- 1 ½ teaspoons garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- ½ teaspoon black pepper
- ½ teaspoon salt
- cayenne pepper to taste
- ½ cup sour cream
- ½ cup greek yogurt
- ½ cup heavy cream
Instructions:
- Heat olive oil and saute chicken and onion until chicken is fully cooked.
- Mix in beans, green chilies, broth, and seasonings.
- Bring to a boil and simmer for 20-30 minutes.
- Turn off heat and mix in sour cream, greek yogurt, and heavy cream.

Notes:
- To cook in a slow cooker, place all ingredients in a slow cooker except sour cream, greek yogurt, and heavy cream. Cook on low 5-7 hours or 2-3 hours on high. Once chicken has reached 165F, mix in remaining ingredients and serve.
- To cook in a pressure cooker, place all ingredients in a slow cooker except sour cream, greek yogurt, and heavy cream. If chicken is diced, cook for 5-7 minutes. If chicken is frozen, cook for 12-15 minutes. Once chicken has reached 165F, shred chicken if needed and mix in remaining ingredients before serving.
- You can garnish with shredded cheese, cilantro, or green onions.
- You can also add more vegetables like zucchini, spinach, or bell peppers if desired.
