Ingredients:

Pudding Base

  • 2 Tablespoons chia seeds
  • 1/2 cup unsweetened almond milk

Sweetener

  • 1 Tablespoon strawberry jam

Flavors

  • 1/4 cup frozen berries, thawed
  • 1 teaspoon vanilla

Texture Elements

  • 2 Tablespoons slivered almonds
  • 2 Tablespoons unsweetened coconut 

Instructions:

  1. Thaw frozen berries then add chia seeds, jam, vanilla, and milk. Stir until well combined. 
  2. Cover and place in the refrigerator for at least 2 hours or overnight. 
  3. Stir in coconut and almonds. 
  4. Enjoy!

  • Other Flavor combos:
    • Chunky Monkey (cocoa powder, mashed banana, vanilla, and peanut butter)
    • Cinnamon roll (brown sugar, vanilla, and cinnamon)
    • Blueberry Lemon (blueberries, almond extract, and lemon zest)
    • Pina colada (pineapple, coconut extract or coconut milk with coconut flakes)
    • Mint chocolate chip (cocoa powder, mint extract, mini chocolate chips)
    • Strawberry Cheesecake (strawberry jam, sugar free cheesecake pudding mix, vanilla extract).
    • Get creative!
  • Other Sweeteners: honey, jam, molasses, brown sugar, or maple syrup 
  • Other Texture Elements: nuts, mini chocolate chips, shredded coconut, crunchy peanut butter, flax or sunflower seeds. Add just before serving. 
  • You could add Greek yogurt or peanut butter powder to increase protein and make it more of a meal.
  • Use fresh, frozen, or canned fruit. Add fresh fruit just before serving.
  • It is easy to prepare several servings in multiple containers at once. Makes a great grab n go meal or snack. Store in the fridge for up to 1 week. Could make in a mason jar and shake to mix for easy clean up.
  • If you don’t have almond milk, could try ¼ cup cow’s milk and ¼ cup water
  • Chia seeds are rich in omega 3s and fiber which are good for your blood sugar and gut health!
