Recipe makes 4 servings

Ingredients:

  • 1lb chicken breast
  • 8oz low fat cream cheese
  • 1 Tbsp ranch seasoning
  • ½ cup shredded cheese
  • ½ cup low sodium chicken broth

Instructions:

  1. Place chicken in a pressure cooker. Add chicken broth and ranch seasoning.  
  2. Pressure cook for 12-15 minutes or until chicken is 165F.
  3. Shred chicken. 
  4. Add cream cheese and shredded cheese. Mix until the cheeses have fully melted.
  5. Serve with a high protein pasta or a low carb tortilla and a side of vegetables. Enjoy!

Notes: 

  • To cook in a slow cooker, make sure chicken is defrosted. If desired, remove the chicken broth for a creamier sauce. Keep the same steps, but add cream cheese before chicken is cooked. Cook on low for 6-8 hours or high for 4 hours.
