Recipe makes 4 servings
Ingredients:
- 1lb chicken breast
- 8oz low fat cream cheese
- 1 Tbsp ranch seasoning
- ½ cup shredded cheese
- ½ cup low sodium chicken broth
Instructions:
- Place chicken in a pressure cooker. Add chicken broth and ranch seasoning.
- Pressure cook for 12-15 minutes or until chicken is 165F.
- Shred chicken.
- Add cream cheese and shredded cheese. Mix until the cheeses have fully melted.
- Serve with a high protein pasta or a low carb tortilla and a side of vegetables. Enjoy!

Notes:
- To cook in a slow cooker, make sure chicken is defrosted. If desired, remove the chicken broth for a creamier sauce. Keep the same steps, but add cream cheese before chicken is cooked. Cook on low for 6-8 hours or high for 4 hours.
