Recipe makes 1 serving

Ingredients:

  • 1 pouch or ½ 5 oz can of tuna
  • 1 Tablespoon mayonnaise
  • 1 teaspoon sriracha
  • 10 nori snack sheets
  • 1/3 cup cooked rice
  • 1/2 avocado, sliced
  • 1/2 cucumber, sliced
  • 2 tablespoons cream cheese, sliced

Instructions:

  1. In a small bowl, mix tuna with mayonnaise and sriracha.
  2. Lay one nori sheet down on a flat surface and use your finger to brush water along one short edge. Then lay the second sheet on top so it slightly overlaps the area with the water. This should create one long rectangle. 
  3. Start on one end of the long rectangle placing 2 cucumber slices, an avocado slice, a cream cheese slice, 1 tablespoon of spicy tuna, and 1 tablespoon of rice. Keep ingredients closely packed together as you roll it up. You may want to brush water on the edge of the nori again to help keep it together. 
  4. Repeat until you have 5 rolls.
  5. Enjoy!

  • Other common sushi ingredients include: carrots, sesame seeds, salmon, imitation crab, shrimp, pickled ginger, bonito flakes. Find new combinations that you enjoy.

  • Canned tuna can make this a budget friendly and shelf stable option.
  • If you do not prefer nori (seaweed), you can try rolling up the ingredients in a low carb tortilla instead.
