Recipe makes 4 servings 

Ingredients: 

  • 2 delicata squash 
  • 2 Tbsp olive oil
  • ½ cup toasted pumpkin seeds 
  • ¼ cup pomegranate seeds 
  • Salt and pepper

Instructions: 

  1. Begin by preheating your oven to 425 degrees.
  2. Gently cut the squash in half lengthwise and remove the seeds with a spoon, discarding them.
  3. Place the sliced squash into a mixing bowl and combine it with olive oil. 
  4. Lay the squash cut side down on a cutting board. Top with salt and pepper. 
  5. Place squash in the oven for 20 minutes or until it reaches the desired tenderness.
  6. Once cooked, transfer the roasted squash to a serving platter, and garnish it with pomegranate and pumpkin seeds.
  7. Serve immediately.
