Ingredients:
- 2 delicata squash
- 2 Tbsp olive oil
- ½ cup toasted pumpkin seeds
- ¼ cup pomegranate seeds
- Salt and pepper
Instructions:
- Begin by preheating your oven to 425 degrees.
- Gently cut the squash in half lengthwise and remove the seeds with a spoon, discarding them.
- Place the sliced squash into a mixing bowl and combine it with olive oil.
- Lay the squash cut side down on a cutting board. Top with salt and pepper.
- Place squash in the oven for 20 minutes or until it reaches the desired tenderness.
- Once cooked, transfer the roasted squash to a serving platter, and garnish it with pomegranate and pumpkin seeds.
- Serve immediately.
