Recipe makes 1 servings

Ingredients:

  • ⅓ can chickpeas
  • 2 tbsp tahini
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • Salt and garlic powder, to taste
  • 2 cups any vegetables of choice (try shredded lettuce and/or cabbage, cucumber, tomato, red onion, etc)
  • 1 oz crumbled feta cheese

Instructions:

  1. Add the chickpeas, tahini, olive oil, lemon juice, and seasonings to a large salad bowl. Mix to combine well.
  2. Add your vegetables into the bowl and stir to combine. You can add some extra olive oil and/or lemon juice here if it seems a little dry.
  3. Top with feta and enjoy!
