Recipe makes 1 servings
Ingredients:
- ⅓ can chickpeas
- 2 tbsp tahini
- 1 tbsp olive oil
- 2 tsp lemon juice
- Salt and garlic powder, to taste
- 2 cups any vegetables of choice (try shredded lettuce and/or cabbage, cucumber, tomato, red onion, etc)
- 1 oz crumbled feta cheese
Instructions:
- Add the chickpeas, tahini, olive oil, lemon juice, and seasonings to a large salad bowl. Mix to combine well.
- Add your vegetables into the bowl and stir to combine. You can add some extra olive oil and/or lemon juice here if it seems a little dry.
- Top with feta and enjoy!
