Recipe makes 4 servings
Ingredients:
- 4 eggs
- 6 tablespoons coconut aminos
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon ginger
- 1/4 teaspoon pepper (white or black)
- 1/4 teaspoon red pepper flakes
- 1/4 cup water
- 1 lb ground pork
- 6 green onions, diced
- 6 cups coleslaw mix (about 1 bag)
- 4 cloves garlic, minced
- 8 oz whole wheat spaghetti, cooked
Instructions:
- Whisk eggs in a small bowl. Set aside.
- In a separate bowl, whisk coconut aminos, rice vinegar, sesame oil, ginger, black pepper, red pepper, and water. Set aside
- In a large saute pan or pot, add ground pork and set the stove to medium high heat.
- Once pork is fully cooked add green onions and coleslaw. Saute for 2-3 minutes.
- Add garlic. Saute for an additional minute.
- Make a well in the middle of the pan and pour in whisked eggs.
- Scramble eggs in the center, then mix altogether.
- Toss in cooked noodles and pour in sauce. Saute for 3-5 minutes.
- Enjoy!

Notes:
- Instead of pork, you could also use ground beef, turkey, edamame, or tofu.
- You can substitute low sodium soy sauce for the coconut aminos, but it will have a higher sodium content.
- Garnish with sriracha and cilantro if desired.
