Recipe makes 4 servings

Ingredients:

  • 4 eggs
  • 6 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger
  • 1/4 teaspoon pepper (white or black)
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup water
  • 1 lb ground pork
  • 6 green onions, diced
  • 6 cups coleslaw mix (about 1 bag)
  • 4 cloves garlic, minced
  • 8 oz whole wheat spaghetti, cooked

Instructions:

  1. Whisk eggs in a small bowl. Set aside. 
  2. In a separate bowl, whisk coconut aminos, rice vinegar, sesame oil, ginger, black pepper, red pepper, and water. Set aside
  3. In a large saute pan or pot, add ground pork and set the stove to medium high heat. 
  4. Once pork is fully cooked add green onions and coleslaw. Saute for 2-3 minutes. 
  5. Add garlic. Saute for an additional minute. 
  6. Make a well in the middle of the pan and pour in whisked eggs. 
  7. Scramble eggs in the center, then mix altogether. 
  8. Toss in cooked noodles and pour in sauce. Saute for 3-5 minutes. 
  9. Enjoy!

Notes: 

  • Instead of pork, you could also use ground beef, turkey, edamame, or tofu. 
  • You can substitute low sodium soy sauce for the coconut aminos, but it will have a higher sodium content.
  • Garnish with sriracha and cilantro if desired.
