Recipe makes 4 servings
Ingredients:
- 1 pound tilapia (about 4-6 medium filets)
- ΒΌ cup grated parmesan
- 2 Tablespoons butter
- 1 1/2 Tablespoons mayonnaise
- 1 Tablespoon lemon juice
- 1 teaspoon dill
- Salt and Pepper to taste
Instructions:
- Melt butter in the microwave in a microwave-safe bowl.
- Mix the butter, parmesan, mayonnaise, lemon juice, dill, salt, and pepper.
- Line a baking sheet with parchment paper or aluminum foil. Spray lined pan with cooking spray.
- Place tilapia on the baking sheet and evenly spread parmesan mixture over fillets.
- Bake at 400F for 20-23 minutes. Tilapia should be a minimum temperature of 145F.

Notes:
- You can cook starchy and/or non-starchy vegetables at the same time for a one-pan meal and allow for easy clean up.
- If tilapia is frozen, it does not need to be defrosted before cooking. However, if you want a thicker topping, you will want to defrost the tilapia first.
- After baking, you can broil the tilapia on high for an additional 2-3 minutes to allow the topping to brown a little.
