Recipe makes 4 servings

Ingredients:

  • 1 pound tilapia (about 4-6 medium filets)
  • ΒΌ cup grated parmesan
  • 2 Tablespoons butter
  • 1 1/2 Tablespoons mayonnaise
  • 1 Tablespoon lemon juice
  • 1 teaspoon dill
  • Salt and Pepper to taste

Instructions:

  1. Melt butter in the microwave in a microwave-safe bowl.
  2. Mix the butter, parmesan, mayonnaise, lemon juice, dill, salt, and pepper.
  3. Line a baking sheet with parchment paper or aluminum foil. Spray lined pan with cooking spray.
  4. Place tilapia on the baking sheet and evenly spread parmesan mixture over fillets.
  5. Bake at 400F for 20-23 minutes. Tilapia should be a minimum temperature of 145F.
  6. Enjoy!

Notes:

  • You can cook starchy and/or non-starchy vegetables at the same time for a one-pan meal and allow for easy clean up.
  • If tilapia is frozen, it does not need to be defrosted before cooking. However, if you want a thicker topping, you will want to defrost the tilapia first.
  • After baking, you can broil the tilapia on high for an additional 2-3 minutes to allow the topping to brown a little.
