Recipe makes 3 servings

Ingredients: 

  • 1 tbsp olive oil 
  • 1 medium zucchini, quartered
  • 1 medium yellow squash, quartered
  • ½ medium red onion, diced into 1 inch pieces
  • 1 medium sweet potato, diced into 1 inch pieces
  • 3 pre-cooked chicken sausage links (choose your favorite kind), sliced 
  • Salt and pepper to taste
  • 3 tbsp mustard
  • 3 tbsp olive oil
  • 1 tbsp maple syrup

Directions:

  1. Preheat oven to 425. 
  2. Prep the veggies: Toss zucchini, yellow squash, red onion, and sweet potatoes in olive oil, salt + pepper and spread evenly on a baking sheet. Roast in preheated oven for 10-15 minutes.
  3. While veggies are cooking, make the sauce by adding all ingredients to a bowl and whisking together with a fork. 
  4. Remove veggies from oven. Toss, then add sliced chicken sausage to the pan evenly and add back to the oven for 10-15 more minutes.

Notes: 

  • You can eat this mixture on its own or serve on a bed of leafy green, cauliflower rice, or your favorite grain. 
  • Feel free to swap out the veggies for any that you prefer! Broccoli, cauliflower, red potatoes, and/or peppers would also be great!
