Recipe makes 6 servings

Ingredients:

  • 1 Tablespoon olive oil
  • 1 pound 93% lean ground beef
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 1 14 oz can tomatoes, diced or crushed
  • 22 oz marinara sauce, low sodium
  • 3 cups low sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 8 oz red lentil pasta, or other high protein pasta
  • 1 cup shredded cheese
  • 1 cup ricotta, part skim

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add beef, onions, and garlic and saute until beef is fully cooked. 
  2. Add tomatoes, marinara sauce, broth, and all spices. 
  3. Bring to a boil then add pasta. 
  4. Reduce heat and simmer for 8-10 minutes or until pasta is tender. 
  5. Turn off heat then stir in cheese and ricotta. 
  6. Enjoy!

Notes: 

  • Garnish with fresh parsley or parmesan cheese
  • You can replace the ricotta with cottage cheese for more protein and budget friendly option.
