Recipe makes 6 servings
Ingredients:
- 1 Tablespoon olive oil
- 1 pound 93% lean ground beef
- 1 medium onion, diced
- 5 cloves garlic, minced
- 1 14 oz can tomatoes, diced or crushed
- 22 oz marinara sauce, low sodium
- 3 cups low sodium chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon onion powder
- 1/2 teaspoon oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 8 oz red lentil pasta, or other high protein pasta
- 1 cup shredded cheese
- 1 cup ricotta, part skim
Instructions:
- Heat olive oil in a large pot over medium heat. Add beef, onions, and garlic and saute until beef is fully cooked.
- Add tomatoes, marinara sauce, broth, and all spices.
- Bring to a boil then add pasta.
- Reduce heat and simmer for 8-10 minutes or until pasta is tender.
- Turn off heat then stir in cheese and ricotta.
- Enjoy!
