Recipe makes 5 servings
Ingredients:
- 2 lbs thin sliced chicken breasts
- 3 tbsp olive oil
- 2 tbsp coconut aminos
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tbsp minced garlic
- Salt and pepper to taste
- Crushed red pepper to taste (optional)
- 4 cups broccolini
- 2 tbsp olive oil or ghee
- 4 small to medium yellow potatoes, diced
- ΒΌ cup almond milk
- 3-4 tbsp ghee or butter
- 1 tsp garlic powder
- 3-4 tbsp olive oil
Instructions:
- Preheat oven to 400 degrees. Grease a pan with olive oil and add the chicken breasts.
- Mix together olive oil, coconut aminos, balsamic vinegar, honey, minced garlic, salt, pepper, and crushed red pepper to make the marinade. Pour over chicken. Bake for 20 minutes.
- While chicken is cooking, start the mashed potatoes. Bring a pot of water to boil and add the potatoes. Boil until fork tender, about 10 minutes.
- While waiting for the potatoes to boil, start the broccolini. Add 2 tbsp olive oil or ghee to a saute pan over medium heat. Place the broccolini in the pan in a single layer and season with salt and pepper. Cover and let steam and char while the potatoes are cooking. Flip/rotate occasionally.
- Strain the water from the potato pot and then add potatoes back to the pot. Mash with a potato masher then add in almond milk, ghee or butter, garlic powder, and olive oil.
