Recipe makes 5 servings

Ingredients:

  • 2 lbs thin sliced chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp coconut aminos
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp minced garlic
  • Salt and pepper to taste
  • Crushed red pepper to taste (optional)
  • 4 cups broccolini
  • 2 tbsp olive oil or ghee
  • 4 small to medium yellow potatoes, diced
  • ΒΌ cup almond milk
  • 3-4 tbsp ghee or butter
  • 1 tsp garlic powder
  • 3-4 tbsp olive oil

Instructions:

  1. Preheat oven to 400 degrees. Grease a pan with olive oil and add the chicken breasts. 
  2. Mix together olive oil, coconut aminos, balsamic vinegar, honey, minced garlic, salt, pepper, and crushed red pepper to make the marinade. Pour over chicken. Bake for 20 minutes. 
  3. While chicken is cooking, start the mashed potatoes. Bring a pot of water to boil and add the potatoes. Boil until fork tender, about 10 minutes. 
  4. While waiting for the potatoes to boil, start the broccolini. Add 2 tbsp olive oil or ghee to a saute pan over medium heat. Place the broccolini in the pan in a single layer and season with salt and pepper. Cover and let steam and char while the potatoes are cooking. Flip/rotate occasionally.
  5. Strain the water from the potato pot and then add potatoes back to the pot. Mash with a potato masher then add in almond milk, ghee or butter, garlic powder, and olive oil. 
  6. Enjoy!
