Recipe makes 5 servings

Ingredients:

  • ⅓ cup low sodium soy sauce
  • 2 tsp apple cider vinegar
  • 1 tbsp cornstarch or arrowroot starch
  • 2 tsp garlic powder
  • 1 tsp ginger powder
  • 2 tbsp avocado oil
  • 3 cups broccoli florets
  • ¾ tsp salt
  • ¼ tsp pepper
  • 1 lb lean ground beef

Instructions:

  1. Whisk together the soy sauce, water, apple cider vinegar, cornstarch, garlic powder, ginger powder and set aside.
  2. Heat the avocado oil in a large pan over medium heat. Add broccoli and season with salt and pepper. Saute for 5-6 minutes, then set aside.
  3. Add the ground beef to the pan, crumble and cook until browned. Drain excess fat. 
  4. Add broccoli back to the pan along with the sauce mixture. Stir and heat for 1-2 minutes until the sauce slightly thickens. 
  5. Remove from heat and serve with rice, cauliflower rice, or lettuce wraps.

Notes: 

  • If the sauce starts to get too thick while heating at the end, you can add some water to the pan to thin it out.
