Recipe makes 4 servings
Ingredients:
- 2 lb pork tenderloin
- Salt
- Pepper
- 1 teaspoon paprika
- ½ teaspoon red chili pepper flakes
- 1 teaspoon dried thyme
- 4 cloves garlic
- ½ medium onion
- 1 tablespoon olive oil
- ¾ cup chicken broth
- 3 cups broccoli
- 1 cup carrots, sliced
- ½ cup milk
- 1 tablespoon cornstarch
Instructions:
- Season pork with salt, pepper, and paprika on all sides.
- Turn on Saute mode on pressure cooker and add 1 tablespoon olive oil to pot.
- Sear pork on all sides, about 3-5 minutes on each side.
- Turn of saute mode. Add onion, chicken broth, garlic, red pepper flakes, thyme, broccoli, and carrots.
- Put pressure cooker lid on and make sure vent is turned to the sealing position.
- Pressure cook for 15-20 minutes.
- Quick release pressure by opening the vent. Internal temperature of the pork should be a minimum of 145 degrees Fahrenheit.
- Remove pork and let it sit for a few minutes. While pork rests, mix cornstarch with milk. Add to pot and turn on saute mode till sauce has thickened, about 2-3 minutes.
- Slice pork and serve with vegetables, mashed potatoes, or starch of choice.

Notes:
- For a creamier sauce, cook vegetables separately and substitute heavy cream for milk.
- To adapt for a slow cooker, sear pork in a separate pan. Then place ingredients in a slow cooker with same steps listed above and cook on high 4-5 hours or low for 6-8 hours.
