Recipe makes 4 servings
Ingredients:
- Sauce
- 1 tablespoon chipotle peppers in adobo sauce, chopped
- ½ cup heavy cream
- ¼ cup milk
- 2 cloves garlic
- ½ teaspoon cumin
- ½ teaspoon salt
- Zest of one orange
- Cucumber Salad
- 1 large (or 2 small) cucumber, sliced
- 1 tablespoon olive oil
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
- Tilapia
- 1lb tilapia
- 1 tablespoon olive oil
- Rice
- 1 ½ cups cooked rice
- ½ cup chopped cilantro, if desired
- Squeeze of lime or orange juice, if desired
Instructions:
- Start with the cucumber salad. Mix all the ingredients and set aside until ready to serve.
- Place all the ingredients for the sauce in a blender and lightly pulse until mixed. Be sure not to over mix.
- Add olive oil to a pan and cook tilapia for about 4 minutes on each side.
- Once tilapia is cooked, pour sauce on top and let it simmer for up to 5 minutes.
- If desired, mix cilantro and lime or orange juice with the cooked rice.
- Serve in a bowl garnished with cilantro, tomatoes, avocado, or green onions.

- Can also serve with quinoa instead of rice or with noodles.
- Can replace tilapia with 1 pound of shrimp or chicken.
