Recipe makes 5-7 servings
Ingredients:
- 2 chicken breasts, cooked and shredded
- 1/2 yellow onion, diced
- 1 small shallot, diced
- 2 cloves garlic, minced
- 2 large carrots, diced
- 8 oz baby Bella mushrooms
- 1 cup wild rice
- 6 cups chicken broth
- 1.5 tbsp old bay seasoning
- 1 can coconut milk
- 1 cup kale or spinach, chopped
Instructions:
- In a large soup pot over medium heat, saute onion and shallot in olive oil for 3-5 minutes until translucent.
- Add garlic and saute for another minute.
- Add carrots, mushrooms, rice, broth, and old bay seasoning and stir to combine.
- Bring to a boil and then cover and let simmer for about 30 minutes until rice is fully cooked.
- Add shredded chicken, coconut milk, and kale. Stir and let heat through for a minute or two.
- Serve hot and enjoy!
