Recipe makes 5-7 servings

Ingredients:

  • 2 chicken breasts, cooked and shredded
  • 1/2 yellow onion, diced
  • 1 small shallot, diced
  • 2 cloves garlic, minced
  • 2 large carrots, diced
  • 8 oz baby Bella mushrooms
  • 1 cup wild rice
  • 6 cups chicken broth
  • 1.5 tbsp old bay seasoning
  • 1 can coconut milk
  • 1 cup kale or spinach, chopped

Instructions:

  1. In a large soup pot over medium heat, saute onion and shallot in olive oil for 3-5 minutes until translucent. 
  2. Add garlic and saute for another minute. 
  3. Add carrots, mushrooms, rice, broth, and old bay seasoning and stir to combine.
  4. Bring to a boil and then cover and let simmer for about 30 minutes until rice is fully cooked.
  5. Add shredded chicken, coconut milk, and kale. Stir and let heat through for a minute or two. 
  6. Serve hot and enjoy!
