Recipe makes 4 servings

Ingredients:

  • 1lb chicken
  • 1 tsp Italian seasoning
  • Salt and pepper
  • 10oz condensed cream of chicken soup, low sodium
  • 8oz sour cream
  • 6oz stuffing mix
  • 1/2 cup diced onion
  • ½ cup diced celery
  • ¾ cup chicken broth, low sodium
  • 4 cup carrots or other non-starchy vegetable

Instructions:

  1. Mix cream of chicken, sour cream, stuffing mix, onion, celery, and chicken broth in a bowl.
  2. Place chicken in a slow cooker and season with salt, pepper, and Italian seasoning.
  3. Spread stuffing mixture on top of chicken.
  4. Press and line the top of the slow cooker with aluminum foil until it creates a bowl shape. Use a toothpick to poke holes in the foil to allow steam to escape.
  5. Place carrots or other vegetables in the foil and season to taste.
  6. Cook on high for 4 hours or low for 6-7 hours. Chicken should read a minimum temperature of 165F.
  7. Shred chicken, serve, and enjoy!

Notes:

  • You can replace sour cream with Greek yogurt for more protein and less fat.
