Recipe makes 4 servings
Ingredients:
- 1lb chicken
- 1 tsp Italian seasoning
- Salt and pepper
- 10oz condensed cream of chicken soup, low sodium
- 8oz sour cream
- 6oz stuffing mix
- 1/2 cup diced onion
- ½ cup diced celery
- ¾ cup chicken broth, low sodium
- 4 cup carrots or other non-starchy vegetable
Instructions:
- Mix cream of chicken, sour cream, stuffing mix, onion, celery, and chicken broth in a bowl.
- Place chicken in a slow cooker and season with salt, pepper, and Italian seasoning.
- Spread stuffing mixture on top of chicken.
- Press and line the top of the slow cooker with aluminum foil until it creates a bowl shape. Use a toothpick to poke holes in the foil to allow steam to escape.
- Place carrots or other vegetables in the foil and season to taste.
- Cook on high for 4 hours or low for 6-7 hours. Chicken should read a minimum temperature of 165F.
- Shred chicken, serve, and enjoy!
