Recipe makes 6 servings
Ingredients:
- 1/2 cup shredded cheddar cheese
- 2/3 cup cottage cheese
- 1/4 cup grated parmesan
- 1/4 cup all purpose flour
- 2/3 cup almond flour
- 1/4 teaspoon salt
- 4 eggs
- 2 tablespoons green onions, sliced
- 1 teaspoon baking powder
- 3 tablespoons water
Instructions:
- Preheat the oven to 400F.
- Mix all ingredients in a medium bowl until well combined.
- Spray muffin tin with non-stick cooking spray. If using muffin liners, you may still want to spray those as well.
- Evenly scoop batter to create 6 muffins.
- Bake at 400 F for 25-30 minutes.

Notes:
- Try adding different breakfast meats or veggies like spinach, shredded carrots, or zucchini.
- Use oat flour to replace all purpose flour for a gluten free option, or to replace almond flour for a more budget friendly option.
- This recipe is great for meal prep. Very little hands-on cooking time. You can make a large batch and freeze the extras. If microwaving later, may want to leave the original oven cooking time more towards the 25 minute mark.
- 2 muffins may still score in the green and can serve as a quick grab n go breakfast.
