Recipe makes 6 servings

Ingredients:

  • 1/2 cup shredded cheddar cheese
  • 2/3 cup cottage cheese
  • 1/4 cup grated parmesan
  • 1/4 cup all purpose flour
  • 2/3 cup almond flour
  • 1/4 teaspoon salt
  • 4 eggs
  • 2 tablespoons green onions, sliced
  • 1 teaspoon baking powder
  • 3 tablespoons water

Instructions:

  1. Preheat the oven to 400F. 
  2. Mix all ingredients in a medium bowl until well combined. 
  3. Spray muffin tin with non-stick cooking spray. If using muffin liners, you may still want to spray those as well.
  4. Evenly scoop batter to create 6 muffins.
  5. Bake at 400 F for 25-30 minutes. 
  6. Enjoy!

Notes: 

  • Try adding different breakfast meats or veggies like spinach, shredded carrots, or zucchini.
  • Use oat flour to replace all purpose flour for a gluten free option, or to replace almond flour for a more budget friendly option.
  • This recipe is great for meal prep. Very little hands-on cooking time. You can make a large batch and freeze the extras. If microwaving later, may want to leave the original oven cooking time more towards the 25 minute mark.
  • 2 muffins may still score in the green and can serve as a quick grab n go breakfast.
