Recipe makes 6 servings 

Ingredients:

  • 12 circle crackers
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 3 cups cooked broccoli, chopped
  • 1 cup shredded cheddar cheese

Instructions:

  1. Set the oven to 375 fahrenheit. 
  2. Spray muffin pan with non-stick spray and place a cracker in each slot. 
  3. Mix broccoli, egg, salt, garlic powder, and cheese in a medium bowl. 
  4. Spoon about 2 tablespoons of broccoli mixture into each muffin cup or until broccoli mixture is evenly distributed.
  5. Bake for 15-20 minutes.
  6. Enjoy!

Notes: 

  • You can use frozen broccoli that is steamable in the bag for fast prep. Or dice fresh broccoli and steam in the microwave or on the stove top. 
  • These can make a great grab and go snack or addition to any meal. 
  • Try to drain broccoli dry before mixing in other ingredients to prevent the crackers from getting soggy. 
  • If preferred, you could instead crush the crackers and add to the broccoli mixture.
