Recipe makes 1 serving

Ingredients:

  • 1 low carb tortilla
  • 3 eggs
  • 1/4 cup onion, diced
  • 1/4 cup bell pepper, diced
  • 1/4 cup tomato, diced
  • 1/4 cup spinach, diced
  • 1/4 cup shredded cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp parsley
  • dash of salt and pepper

Instructions:

  1. Preheat oven to 375F. 
  2. Dice all the vegetables. 
  3. Cover a pie pan with foil and create a well in the center. 
  4. Place tortilla in the foil. Make sure the sides of the tortilla are slightly elevated. 
  5. Crack the eggs onto the center of the tortilla. 
  6. Sprinkle vegetables, cheese and seasonings on top. 
  7. Bake for 15-20 minutes. 
  8. Enjoy!

Notes: 

  • You could whisk eggs with cottage cheese prior to adding toppings for a creamier pizza and extra protein. 
  • Other toppings include: ham, sausage, pickled onions, fresh herbs like basil, pesto, hash browns, green onions, sriracha, gravy, and more! 
  • You could try using roasted or sauteed vegetables for a different texture and added flavor. 
  • If desired, you can also broil the pizza for 2-3 minutes after it has finished cooking for an extra crispy crust and melted cheese.
