Recipe makes 4 servings

Ingredients:

  • 1 lb boneless skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ⅓ cup grated parmesan cheese
  • 2 teaspoons italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 large egg white
  • 1 large egg
  • 4 ounces part-skim mozzarella
  • ½ cup marinara sauce

Instructions:

  1. Preheat oven to 400 degrees fahrenheit. Prepare a baking sheet with cooking spray or parchment paper. 
  2. Cut each chicken breast in half lengthwise so you have 4 pieces total. Pound each piece to an even thickness.
  3. In one wide, shallow bowl, combine breadcrumbs, parmesan, garlic powder, and pepper. In a separate bowl, whisk together the egg whites.
  4. Working one piece at a time, dip the chicken into the egg whites and let any excess drip off. Then dip into the breadcrumbs and pat the chicken to ensure the crumbs stick. Then lay on the baking sheet. Brush the top with some oil. 
  5. Bake for about 15 minutes until chicken is cooked through and crust is golden brown. 
  6. Remove from the oven and evenly spoon the sauce and cheese on top of the chicken. Return to the oven for 3-5 minutes until cheese is melted. 
  7. Serve with your favorite veggies or sides.
