Recipe makes 4 servings

Ingredients:

  • 4 cod fillets
  • ½ packet taco seasoning
  • 8 corn tortillas
  • 1 cup shredded cabbage
  • 4 tbsp olive oil mayo
  • ½ lime, juiced
  • ¾ cup cilantro, chopped
  • Salt and pepper, to taste
  • 1 avocado, sliced
  • Pickled onion (optional)

Instructions:

  1. Preheat the oven to 400 degrees. Season the cod fillets until they are fully coated with the taco seasoning. Bake on a parchment lined baking sheet for 12-15 minutes until flaky.
  2. Combine cabbage, mayo, lime juice, cilantro, salt and pepper until well combined. 
  3. Heat the tortillas in a dry pan over medium heat for 1-2 minutes per side. When the fish is done, break it up into chunks.
  4. Assemble the tacos with a couple chunks of fish per tortilla, topped with the cabbage slaw, avocado slices, pickled onions, some more cilantro, and a squeeze of lime juice!

Notes: 

  • For a higher protein version of the slaw, you can swap mayo for greek yogurt!
