Recipe makes 4 servings
Ingredients:
- 4 cod fillets
- ½ packet taco seasoning
- 8 corn tortillas
- 1 cup shredded cabbage
- 4 tbsp olive oil mayo
- ½ lime, juiced
- ¾ cup cilantro, chopped
- Salt and pepper, to taste
- 1 avocado, sliced
- Pickled onion (optional)
Instructions:
- Preheat the oven to 400 degrees. Season the cod fillets until they are fully coated with the taco seasoning. Bake on a parchment lined baking sheet for 12-15 minutes until flaky.
- Combine cabbage, mayo, lime juice, cilantro, salt and pepper until well combined.
- Heat the tortillas in a dry pan over medium heat for 1-2 minutes per side. When the fish is done, break it up into chunks.
- Assemble the tacos with a couple chunks of fish per tortilla, topped with the cabbage slaw, avocado slices, pickled onions, some more cilantro, and a squeeze of lime juice!

- For a higher protein version of the slaw, you can swap mayo for greek yogurt!
