Recipe makes 8 servings

Ingredients:

  • 8 oz cream cheese
  • 1 cup chopped pecans
  • 3/4 cup dried cranberries, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped green onions

Instructions:

  1. Mix pecans, dried cranberries, and green onions in a bowl.
  2. In a separate bowl, mix cream cheese and cheddar cheese.
  3. Mix in half the pecan mixture to the cream cheese bowl.
  4. Spoon cream cheese mixture onto a piece of plastic wrap. Use the plastic wrap to shape the cream cheese into a log shape.
  5. Place cheese log in the fridge if needed to firm up the cheese.
  6. Pour and press the remaining pecan mixture around your cheese log until it is fully coated.
  7. Serve with crackers or raw vegetables. Enjoy!
